Producing Inulin from local sources

Inulin from local sources

Inulin (a natural polysaccharide containing fructose) is widely used in medicine and food products because of its useful nutritional properties and prebiotic effects. This substance can be used as a suitable replacement for fat and sugar in dietary products. Therefore its production has been rising in recent years as well as its price. The main source of commercial Inulin is the root of Cichorium.
